CHEF’S NOTE

ROOTED in SIMPLICITY

I grew up in Paris, surrounded by the beauty of real food.
 France is a country of endless abundance ; fruits, vegetables, fish, amazing cheeses, each with its own soul, textures and and season.

 

As a child, my mother always chose raw and honest ingredients : fresh and seasonal and turned them into something beautiful, simple, and never overworked.
 Her food wasn’t fancy, but it was always delicious, balanced, and made with love and care.

 

I was lucky, and I still am.
She taught me what truth tastes like.

 

Her attention to the moment, the way she made every meal feel special, taught me even more. She is a wonderful host, always bringing people together, always cooking, always creating warmth around the table and at home.
And, of course, in Paris, being surrounded by artisans, markets, and people who truly honour food gave me an extra sense of sincerity, of care.

 

We don’t always realise how rich our
French culture is until we leave it.


When I started traveling for work as a Chef and private Chef, I understood how extraordinary France is; this culture of simplicity, respect, and craft.
The taste of what’s real : that’s my foundation.
 For me, grocery shopping isn’t a task, it’s a ritual.
 Even when I travel, I always visit local markets.
I need to feel the place through its produce,
the colours, the textures, the scents, the people.

 

You can understand so much about a culture just by watching what people choose to cook and eat.
 It’s endlessly fascinating, a window into life itself.
