CHEF’S NOTE

My Daily RHYTHM

In the morning, I love starting with fruit.
 It feels light, full of energy and clarity and, as a Chef,
it gives me a sense of freedom for the rest of the day, because, I have to taste and try many things. 
 With fruits, I feel nourished, never heavy. So, papaya, mango, watermelon (the whole thing actually)..
and few gold kiwi. I eat a lot of fruits. Love that!
They’re good for my skin and happiness and
that’s all that count for me.


I do not care the amount of sugars in it.
I truly enjoy my fruits.
People often say it’s better to include protein in the morning to stabilise blood sugar, and yes, that’s true.
But for me, fruit just feels right and I do not need a
full meal at 7am when everything is about to start.
I pair it with a coffee, dripper always for me, or a sensha green tea or matcha, prepared simply, with no milk,
no sugar, just water : well-whisked, frothy and pure.


It’s a small morning ritual that wakes my senses gently.
At lunchtime, it depends on the rhythm of the day.
 If I have time, I’ll make a fresh juice: beetroot, celery, cucumber, lots of ginger and lime.  So refreshing and light. It boost digestion and give you instant energy and desire to conquer your day in the most effective way. Fav! 
 I usually include a small source of protein then, especially when I’m moving a lot or working in the kitchen. I love soft boiled eggs. 6,30 minutes.


Morning is for lightness; noon is for balance.
Dinner is my favourite moment.
No matter at what time I eat, early or late. 
 It’s when I truly relax, when everything slows down.
 There’s always a good source of protein, often fish, love salmon and sea bass or a source of healthy fats AKA avocado. I do not like to mix avocado and protein.



 I prefer to eat a large portion of fish or a whole avocado. There is something more satisfying in eating something generously. And, it’s easier to digest for me.
And of course, I add crisp raw vegetables : fennel is my daily favourite, chives, cilantro, romaine, carrots, spinach leaves. Sometimes a bit of Jasmine rice or well-made sushi rice with two types of rice vinegar, sometimes cold lentils with mustard and olive oil, quinoa with olive oil and salt sounds always comforting.


And always, to finish, a bowl of fruit :
2 apples cut in small sizes (think french fries…). It can be persimmon, mango 
 It’s my way to end the day with softness:
simple, bright, and full of vitality.
