Sashimi, my love note to start 2026
I start the year with what I love most, almost as a love note to it, and made myself a plate of sashimi.
Because sashimi is never just raw fish. It’s roundness and delicacy.
My favourite dialogue between raw, lightly cured, and gently torched. A play of textures and temperatures that melt and surprise with each bite. I love the contrast between thickness and thinness.
Fat and proteins that deeply nourish the skin, the gut, and our energy. This is the art of nourishment to me, when simplicity holds authenticity and depth, with a quiet sense of well-being and longevity.
A plate that feels clean, generous, and deeply satisfying.
