In order to keep your body running efficiently, greens are one of the most important food groups. They are the most nutrient-dense of all foods and full of alkaline minerals and fiber, and, they make up your key Beauty Foods, regenerating and purifying your cells, and keeping your skin glowing your hair sting and shiny! I mean … greens are the key ingredient for a healthy happy body!
Seaweed is much more nutrient dense than any land vegetables. It is an excellent source of micronutrients including folate, calcium, magnesium, zinc, iron, and selenium. More importantly, seaweed is a great source of iodine.⠀
So, I thought it would be great to share my favorite salad! I eat it all the time! I usually have it on a side with some protein source, vegan or not. ⠀
SEAWEED BEAUTY SALAD

- 50 grams dry mixed seaweed (wakame, dulce and agar) @clearspringuk * 1/2 romaine heart⠀
- * 100g baby spinach⠀
- * 1 whole ripe avocado ⠀
- * 100g chopped cucumber⠀
- *1 fennel
- * Some candy beetroot⠀
- * Some toasted sesame seeds⠀
- * 1 scallion, finely chopped⠀
- * Some coriander⠀
- * 2 tbsp of tahini @bionaorganic ⠀
- * 4 tbsp of raw apple cider vinegar
- * A pinch of Himalayan salt⠀
- * Tamari sauce or coconut aminos (optional)⠀

Directions

1. Put the dry seaweed in a large bowl and fill it with cold water. If you like your seaweed crunchy, soak it for 5 minutes, if you like it more tender, soak it for 10 minutes.⠀
2. Finely chop the romaine, spinach, fennel, beetroot, avocado, coriander, and scallion. Mix them in a bowl and add the sauce. ⠀
3. To make the dressing, mix in a blender: 1/4 of the avocado, the tahini, apple cider vinegar, tahini, and salt. Blend until smooth.⠀
4. Drain the seaweed and use your hands to squeeze out excess water. Wipe out any excess water in the bowl. Add them to the salad and mix well to combine all the ingredients in the sauce. Add the sesame seeds or serve! ⠀
